Mushroom Lover's Chicken

Mushrooms pair with everything, and our easy skillet dish Mushroom Lover's Chicken is smothered with a flavorful mushroom sauce that is company-fancy but easy enough for weeknight dinners.
What You'll Need
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 boneless, skinless chicken breast halves (1 to 1-1/2 pounds)
- 2 tablespoons vegetable oil
- 3 tablespoons butter
- 1 small onion, chopped
- 1/2 pound (8 ounces) fresh white mushrooms, sliced
- 1 cup chicken broth
- 1/2 cup dry white wine, optional (see Note)
What to Do

In a shallow dish, combine flour, salt, and pepper; mix well. Dip chicken in flour mixture, coating well.

In a large skillet, heat oil over medium-high heat. Add chicken and cook 4 to 5 minutes per side, or until golden. Remove chicken to a plate and cover.

Melt butter in the same skillet. Add onions and mushrooms; saute 5 to 7 minutes, stirring occasionally. Stir in chicken broth and wine and bring to a boil then reduce heat to low. Return chicken to skillet and cook 6 to 8 more minutes, or until no pink remains, turning chicken once.
- Spoon mushroom sauce over chicken and serve immediately.
Note
If you prefer not to use wine, simple substitute it with an additional 1/2 cup chicken broth.

This is a great recipe and we always use boneless-skinless thighs for added flavor. The only addition is we use a spice from Trader Joe's call 21 Seasoning Salute for all our chicken dishes. It is salt free but it really packs the flavor to a meal.

I have made this recipe multiple times now, with fresh mushrooms if on hand or canned if not, and it is a hit everytime with my husband. He commented at least twice during dinner last night how good it is. Thanks Mr. Food!

This recipe is spot on...really delicious...I start making rice at the same time I start the chicken......both end up being done at the same time.......veggies on the side....voila!,,,

I made this for dinner last night and my husband and I absolutely loved it. The chicken was very juicy and tender; only thing I did differently was used canned sliced mushrooms because I did not have fresh.

I made up a recipe for chicken and mushrooms years ago (about 50) when I first started cooking. Over the years I've tweaked it to where it's now my main go-to. It's so similar to this one. However, I've learned to use chicken quarters as the dark meat is much more flavorful than the bland plain breasts. Using the wine also adds to the recipe. Since the alcohol cooks off, the chicken, mushrooms and gravy taste marvelous. Using the dark meat may increase cooking time a bit but it is worth it.

I am going too try this but I do have a question, what kind of white wine, I've never cooked with wine before and want to try if.

Great question! The rule of thumb when using wine in recipes is never use a wine to cook with that you wouldn't drink. This recipe calls for a dry white wine, so we would suggest either a Chardonnay, Sauvignon Blanc or a Pinot Grigio. All of these can typically be found in your local grocery store. They are often available in 4 packs of smaller bottles. This way, you can use one bottle for the recipe and store the rest for the next time you cook. Enjoy!

I made this last night. I tasted it while in the last stages of cooking and it needed a little something. I added some garlic mixed seasoning and a bit more salt and that did it. It was delicious. Definatly a new favorite!

This recipe is DELICIOUS!!! My new favorite chicken recipe. My kids really loved it too. The chicken is so moist and wonderful.
