Roasted Veggies & Chicken Dinner

As the temperature starts to dip, it’s time to think of recipes that are warm and comforting. That’s why we’re so excited to share this recipe that is just that. And since we start off with frozen roasting veggies and chicken, it couldn’t be easier. We do have to warn you though, the aroma of this cooking has been known to attract quite a crowd, so plan accordingly.
What You'll Need
- 1 (18-ounce) package frozen roasting vegetables (Brussels sprouts, butternut squash & onions)
- 2 red apples, peeled and thinly sliced
- 1/4 cup frozen cranberries (see Tip)
- 1/2 teaspoon ground cinnamon
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 4 tablespoons vegetable oil, divided
- 1/3 cup flour
- 1 teaspoon poultry seasoning
- 4 frozen boneless, skinless chicken breasts, partially thawed
