Good thing these are so easy to make, 'cause they seem to disappear as fast as you make them. This light, creamy dessert cookie recipe is the perfect treat to serve alongside your favorite cup of tea or coffee. Its soft, smooth texture will have you reaching for more!

What You'll Need

  • 1/4 cup (1/2 stick) butter, softened
  • 3/4 cup confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • 1 cup (2 sticks) butter, softened
  • 1/3 cup heavy cream
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar

What to Do

  1. In a medium-sized bowl, cream together filling ingredients: butter, confectioners' sugar, and vanilla extract, until smooth and fluffy. Cover and chill until ready to use.
     
  2. Meanwhile, in another medium-sized bowl, combine 1 cup butter, heavy cream, and flour, mixing thoroughly. Cover and chill for about 30 minutes.
     
  3. Preheat oven to 375 degrees F.
     
  4. Divide dough into quarters, then remove one quarter at a time from refrigerator and do the following: Roll it to a 1/8-inch thickness on a floured board. Cut flattened dough into 1-1/2-inch circles. Use a spatula to transfer rounds to a piece of waxed paper that has been heavily covered with granulated sugar. Turn each round so that both sides are coated with sugar. Place on an ungreased cookie sheet. Poke each round with a fork 3 or 4 times.
     
  5. Bake 7 to 9 minutes, or until set but not brown. When cooled, make a sandwich by placing a dollop of filling between 2 cookies. Repeat until all cookies and cream have been combined.

My Grandmother taught me to make these when I was a girl. The ingredients seem so simplistic, but the flavor is amazing. You can't make enough of them, and you cannot eat enough of them. We used to spend a whole day making nothing but these cookies which would be gone not long after we put them out!! They are on my favorite Cookie recipes.

Does anyone have a recipe for marshmellow frosting? I am desperate...

Are you perhaps referring to boiled icing also known as 7 min icing? If you go to a Betty Crocker cookbook you will find a recipe for it, my mom always made this and it is the closest thing I know of to marshmellow frosting. I remember it had egg whites and sugar that was cooked and it was very sticky and wonderful when it was warm.

Boiled icing and 7 minute icing are not the same thing. It is in the Better Homes & Garden Cookbook under 7 minute icing.

I've been making these since 1963 as "Cream Wafers." They were a classic on cooky trays for teas and receptions with the filling tinted pink or green. They are delicate and pastry-like.

There is a list of ingredients and a list of instructions. You're not going to get much more than that to go on.

My Mom has made these for years and they are to die for, they are that good and rich. Yes color the filling for different holidays. I use wax paper on top to roll them out. Love Love these. I would give these a 10 plus!!!!!!

I think wax paper is the only way to go when you roll these out. I also use wax paper when I roll out pie crust and no longer have a tough pie crust from using too much flour in the rolling process. I bet you could even cut these into different shapes likes stars and hearts and such.

How do you store these little things? They look delicious -- with a little food coloring you could make them for any holiday...
