Breakfast in a Cup

We've got an egg-cellent way to ring in the new year and it doesn't matter how large a brunch you're planning...it's perfect for just the family, or for a New Year's brunch for a bunch!
What You'll Need
- 4 sheets phyllo dough
- 6 eggs
- 1/2 cup processed cheese sauce
- 1/4 cup heavy cream
What to Do

Preheat oven to 350 degrees F.

Stack phyllo dough sheets on a cutting board and cut into six (stacked) squares. Place each square into a muffin cup that has been coated with cooking spray, pressing down to take shape of muffin cup. Without breaking yolks, crack each egg into a phyllo cup.

Bake 15 to 18 minutes, or until eggs are cooked and cups are golden.

Meanwhile, in a small saucepan, heat cheese sauce and cream over medium heat, stirring until heated through. Pour over egg baskets and serve immediately.
Notes
If you'd like, season the eggs with salt and pepper before baking. These can also be made with eggs that have been scrambled with chopped bell peppers, onions, tomatoes, or even broccoli.
