Cookies and Ice Cream

Make up a batch of these to keep in the freezer for an on-the-go treat that works perfectly for our busy lifestyles.
What You'll Need
- 24 fudge-striped cookies
- 1 quart vanilla ice cream
- 2/3 cup chocolate sprinkles
What to Do
- Lay out 12 of the cookies fudge side down on a baking sheet and place a small scoop of ice cream on each cookie. Top with the remaining 12 cookies, forming sandwiches, and lightly press the cookies together.
- Roll the sides in the sprinkles, coating the ice cream completely.
- Freeze for 2 hours, or until firm. Serve, or wrap each in plastic wrap and keep frozen until ready to serve.
Notes
Using different types of cookies and flavors of ice cream makes the combinations for this recipe virtually endless. And you can coat the edges in any type of sprinkles, too - or chopped nuts or even mini chocolate chips. Mmm!
