Farm Stand Hash Browns make the perfect addition to your breakfast spread. We use shortcut ingredients to help you whip up this hearty side dish in no time at all!
What You'll Need
- 1/4 cup olive oil
- 1 (2-pound) bag frozen cubed hash brown potatoes
- 1 red bell pepper, chopped
- 1 onion, chopped
- 2 cups sliced fresh mushrooms
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
What to Do
- In a large skillet, heat oil over high heat.
- Add potatoes, and cook 10 to 12 minutes, or until lightly browned.
- Add bell pepper, onion, mushrooms, salt, and black pepper. Cook 6 to 8 minutes, or until veggies are tender, stirring occasionally. Add spinach and cook 1 minute; serve immediately.

I have had little success in preparing hash browns of any kind. Either they are not all the way cooked or too crispy. What is the happy medium when making them? They are a filling side and typically everyone likes them.

Hi there! If your hash browns are too hard you can maybe try using a quarter cup of water to steam, or, if you're using frozen hash browns, try using refrigerated instead! We hope you find that happy medium soon. Happy cooking!

Thanks for the information in preparing hash browns. I will try the steam the hash browns if they are too crispy the next time I prepare them.

If I elected to use fresh potatoes cut into cubes, would I have the same result? I typically will buy a ten pound bag of russets and sometimes I have to throw them away because they go bad. Would this be an option?

Hi there! Yes, you can use fresh potatoes cut into cubes. However, you would want to par-boil them first. We see no reason this wouldnt work. That being said, we haven't tried this in the Test Kitchen, so we can't guarantee the results. We hope you enjoy!

I had not thought to par-boil the potatoes first and I completely understand that you can't guarantee the results. However, nothing beats a failure but a try.
