Frozen Mochaccino

What better way to celebrate Ice Cream Week than with a frozen version of trendy cappuccino? And with a bit of chocolate mixed in we have a heavenly mocha delight without all the loud hissing, bubbling (and mess!) of the cappuccino machine!
What You'll Need
- 1 cup (1/2 pint) heavy cream
- 1/4 cup confectioners' sugar
- 2 tablespoons instant coffee granules
- 1 teaspoon hot water
- 1 quart chocolate ice cream, softened
- Ground cinnamon for topping
What to Do
- In a medium bowl, with an electric beater on medium speed, beat the cream and confectioners' sugar until stiff peaks form.
- In a large bowl, dissolve the instant coffee granules in the water. Add the ice cream and 1 cup of the whipped cream mixture; mix well.
- Divide the ice cream mixture equally into six small clear plastic cups and spread the remaining whipped cream mixture over the top.
- Sprinkle with the cinnamon, cover, and freeze for at least 4 hours, or until firm.
Notes
I try to use clear plastic cups or, when I can find them, clear plastic coffee cups with handles so that we can see the different layers of the frozen cappuccino.
