Really, who doesn't love a good ice cream cake? Now you don't have to get one from the store because our Easy Ice Cream Cake is just that -- easy! And we can bet no one will ever want the store bought kind again!

What You'll Need

  • 1 pint vanilla ice cream, softened
  • 1 (8-ounce) container frozen whipped topping, thawed
  • 1 (4-serving-size) package strawberry-flavored gelatin
  • 1 (10-3/4-ounce) package frozen pound cake, thawed and cut into 1-inch cubes
  • 8 strawberries

What to Do

  1. Line a 9- x 5-inch loaf pan with plastic wrap, extending over sides.
  2. In a large bowl, combine ice cream, whipped topping, and dry gelatin; mix well. Stir in cake cubes and pour into prepared pan.
  3. Cover with plastic wrap and freeze 6 to 8 hours, or until firm.
  4. Remove from pan, invert onto serving platter, and discard plastic wrap. Garnish with strawberries, then slice and serve. Store leftover ice cream cake in freezer.

Notes

  • Drizzle with hot fudge before serving for that extra special touch!

i recommend to slice and use the pound cake as you go, as the recipe used too much for my large bowl ( you could probably substitute other flavors of jello if you make this, but i stuck to strawberry. depending on how sweet you want the cake, you may want to tone it down when adding the powder. i used the whole amount as instructed, but i regret not using just 3/4ths. the dairy dessert was good and surprisingly, the pound cake kept it's integrity. not mushy at all.

could really make this low fat, low sugar by using frozen yogurt, sugar free jello, low fat whipped topping and angel food cake. Still yum!

Would this recipe work if pudding mix were substituted for the gelatin?

Hi! We have not tried substituting pudding for gelatin, but we can't see why it wouldn't work. Please let us know if you give it a try!

Made this for a group of lady friends that came to lunch, they all loved it, and wanted the recipe. Unfortunately I didn't get to taste it, will have to make another one for the family.
