Individual Raspberry Trifles

Dust off your martini glasses, but hold the ice! The shapely beverage glasses beautifully display this easy-yet-elegant dessert. If you don't have any martini glasses, just use a similar size glass or dessert dish.
What You'll Need
- 1 (3.9-ounce) package vanilla instant pudding mix
- 2 cups fresh raspberries or 2 cups individually frozen unsweetened raspberries, thawed and drained
- 1/2 cup seedless raspberry jam
- 1/2 (10.75-ounce) pound cake, cut into ½-inch cubes
- 1/2 cup whipping cream
- 1 tablespoon sugar
What to Do
- Prepare pudding according to package directions.
- Stir together raspberries and jam. Spoon 1/4 cup raspberry mixture equally into 4 martini glasses (see headnote).
- Top with 1/4 cup pudding and then equal amounts of pound cake. Spoon remaining raspberry mixture over cake; top with remaining pudding. Chill, if desired.
- Beat whipping cream and sugar at high speed of an electric beater until soft peaks form. Dollop on trifles.
