You'll be smiling from "ear to ear" when you make our delicious and colorful chilled Farm-Fresh Corn Salad. What a nice change of pace to team with grill or picnic favorites.
What You'll Need
- 1 (16-ounce) package frozen corn, thawed and drained
- 1 small cucumber, peeled and chopped
- 1 large tomato, chopped
- 1/2 green bell pepper, chopped
- 1/4 cup chopped red onion
- 1/2 cup Italian dressing
What to Do
- In a large bowl, combine all ingredients; mix well. Cover and chill 1 hour. Serve or keep chilled until ready to serve.

I love fresh and colorful salads like this one throughout the spring and summer months. I tend to get bored with regular lettuce based salads, and I love the sweet flavor of corn at the peak of the season! And at this time of the year, fresh sweet corn is super inexpensive at the farmers market where I shop.

This time of year, if you have a garden (and I do) you may have every ingredient in this salad at your disposal. My favorite Italian Dressing is the one made from Good Seasons dry packet seasonings to make fresh myself. This recipe came just at the right time of year for me. Thank you

The only way to make this is use FRESH CORN! Lots more work, but well worth it! (;-)
