Take a break from your classic potato salad to try something a little different, and a whole lot tasty. Our Savory Sweet Potato Salad is just perfect - a little crunchy, a little tangy, and a little bacony. Be prepared to have 'em ask for seconds!
What You'll Need
- 5 sweet potatoes (about 2 pounds), peeled and cut into 1-inch chunks
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 cup chopped celery
- 1/4 cup chopped scallions
- 1/4 cup chopped cooked bacon
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
What to Do
- Place potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat and let boil 12 to 15 minutes, or until fork-tender; drain.
- In a large bowl, combine remaining ingredients; mix well. Add sweet potatoes and gently mix until well coated. Cover and chill 2 hours or until ready to serve.
