Everyone has their favorite variation of potato salad and this Sweet Pickle Potato Salad is a Southern-style one that we got from a viewer who said that her dad always makes this for their family get-togethers, and it's one of their favorites!

What You'll Need

  • 5 pounds red potatoes, washed and cut into 1-inch chunks
  • 1 1/2 cup mayonnaise
  • 1/2 (12-ounce) jar sweet dill pickles, drained and chopped, with 1 tablespoon juice reserved
  • 4 hard-boiled eggs, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper

What to Do

  1. Place potatoes in soup pot and add just enough water to cover them. Bring to boil over high heat then reduce heat to medium and cook 12 to 15 minutes, or until fork-tender; drain. Allow to cool slightly then place in large bowl.
     
  2. Add remaining ingredients, including reserved pickle juice; mix well. Cover and chill at least 2 hours before serving.
     

Notes

If you like extra-moist potato salad, then add an extra cup of mayonnaise before serving.

Who makes super-sweet dill pickles?

Hello there! We've corrected the recipe so that it calls for sweet dill pickles. Thank you for making us aware!

This is basically my recipe except, I omit the eggs, add chopped dill pickles & olives plus the addition of abt. one tsp. of yellow mustard. Oh, use the sweet pickle relish, too.

The recipe of this potato salad is similar to the one I have, except I use sweet pickle relish instead of a jar of the super sweet dill pickles. It saves me from chopping them pickles and it saves my hand and wrist from repetitive motion which could exacerbate to carpal tunnel syndrome.
