Cinnamon Applesauce Pancakes

Here's a great way to make moist, delicious pancakes without eggs or milk. And our Cinnamon Applesauce Pancakes will make your house smell fantastic!

What You'll Need

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 cups water
  • 1/2 cup applesauce
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons vegetable shortening

What to Do

  1. In a large bowl, combine flour, baking powder, sugar, and salt. Add remaining ingredients except shortening; mix well.
  2. In a griddle pan or large skillet over medium heat, heat shortening. Pour 1/4 cup batter onto hot griddle and cook 2 to 3 minutes, or until bubbles begin to form, then turn pancakes over and cook an additional 2 to 3 minutes, or until golden brown. Continue in batches until all batter is used.

Notes

I made these for breakfast this morning and was rather disappointed with the results. They were quite thin almost like eating crepes. I followed the recipe exactly. I noticed this recipe had no eggs. Pancake recipes I have made in the past usually contained an egg or 2 in the batter. Maybe this made the difference? Also I added the 1/2 cup of applesauce called for and they had on real apple flavor at all. Kind of disapointed with my results.

Hello! This recipe was developed for people who can't have eggs or milk. So, if you want you can go ahead and add 2 eggs after adding water. Sometimes, different brands of applesauce vary in thickness, and that's what could have made you pancakes thinner. Hope this is helpful!

I would imagine one could use the pre-made mix and simply add apple sauce. I am going to try this method tomorrow for my mother's birthday,
