Hi..I'm Italian and the "real" cannoli use whipped cream. I think those made with ricotta have a gritty "feel" to the filling. You can either whip your own or use canned whipped cream. Utterly delicious! Sprinkle choc chips on the edges along with powdered sugar. This is the basic recipe but tweak it as you like.

Buon giorno Kay, the traditional cannoli are made with ricotta. Today, they have various ways and flavours. If you can find ricotta fiorella (creamier, best for desserts) otherwise, strain the ricotta first. It will be firmer and won't soak the shells. Ciao a tutti

This recipe looks delicious and I love grannyblu's suggestions.. my mom and dad always said that a recipe is simply a guideline and to personalize it with your own changes. I have home made cannoli rollers but haven't tried them yet. I bought my shells at local Italian cheese store. The recipe I used called for just the ricotta but next time and I wasn't too keen on it,so next time I will try Grannyblu's suggestion.. I've also heard of using vanilla pudding.. I know that would enflame the must be authentic crowd, but then it isn't for them anyway.. its for my family.

I'm new here don't understand the rating system - so many people rate a recipe they haven't even made - so not helpful!!

Your going to see a lot of that here. Wait for the ones that "tweak" recipes so much they've created something all together different.

Yeah I've seen the 'tweakers' - they are nothing more than amusing )

Sometimes in order to leave a comment or ask a question, I am required to rate the recipe. I find it annoying as well when I haven't made it yet.

I was able to reply without doing a rating. Maybe it's a random thing.

It definitely is random. Sometimes it's required and sometimes not.

Where can I get cannoli shells?

Hello, Many groceries carry the cannoli shells. They may be in the bakery section, freezer aisle, or with other Italian products. We recommend calling your local grocery store and asking them if they carry this product. You can also try a local Italian bakery or purchasing them online.

Can you substitute another ingredient for the ricotta cheese without messing with the integrity of the cannolis? My family just does not like ricotta cheese.

you could probably use mars-capon or cream cheese, you might need to add a little bit of milk to thin it out a little. I usually put the ricotta in the food processor and blend it till it is creamy, that way you don't have a chunky texture.

In place of shells, I use broken ice cream waffle cones or the hard cones and use it as a dip. Enjoy it this way in place of the shell.
