    What You'll Need

    • 1 cup heavy cream
    • 1 (8-ounce) package cream cheese, softened
    • 1 (10-ounce) jar raspberry preserves
    • 1 (9-inch) graham cracker pie crust
    • Fresh raspberries and mint leaves for garnish (optional)

    What to Do

    1. In a medium bowl with an electric mixer on medium-high speed, beat whipping cream until stiff peaks form; set aside.
    2. In a large bowl, beat cream cheese on medium-high speed until smooth. Add raspberry preserves. Beat on low just until combined. Gently fold in whipped cream. Spoon mixture into pie crust.
    3. Cover and freeze at least 4 hours, or until firm. Garnish with fresh raspberries and mint leaves, if desired.
