Two-Minute Hawaiian Pie

What You'll Need
- 1 (20-ounce) can crushed pineapple in syrup, undrained
- 1 (6-serving-size) package instant vanilla pudding and pie filling
- 1 (8-ounce) container sour cream
- 1 (9-inch) prepared shortbread pie crust
- 1 (8-ounce) can sliced pineapple, drained and halved
- 8 maraschino cherries, drained
- 2 tablespoons sweetened flaked coconut
What to Do
- In a large bowl, combine crushed pineapple with its syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust and decorate top with pineapple slices and cherries; sprinkle with coconut.
- Cover and chill at least 2 hours, or until set, before serving.

- As strange as it may seem to you, do not make the vanilla pudding according to package directions. Just add the dry pudding mix right in with the other ingredients.

This dessert sounds so dreamy you'd never think it was so easy to make. I agree with you BeckySue on toasting the coconut...it'll add so much dimension to this already delicious pie. I suppose I need to get out more...because I've never heard of shortbread pie crust before, but I'm thinking maybe crushing up some shortbread cookies and using them as the crust would be ok right?

Yes! You can use shortbread cookies! Add some belted butter and bake it for about 10 minutes and it should do the trick.

I have made this in the past with no problems and it is great, but please read the recipe carefully. It says a 6 SERVING size box of pudding mix, not 6 oz. That is the larger size box.

I got the diabetic recipe for this one from a neighbor. Use light sour cream and the large instant sugarless pudding. Everything else remains the same except that I don't use the coconut on top. I halve strawberries or use blue berries for the top. Made it last week (May 2018)for company.

I need to cut the sugar, so I used pineapple in in its own juice and omitted the maraschino cherries, but it was still delicious! I also toasted the coconut first a little. I couldn't find a shortbread pie crust, so I used the individual shortbread rounds and simply arranged them in a square pan. The sour cream gives this a nice creaminess and a tang.

Becky, Use light sour cream and the large instant no sugar pudding. I got this from my neighbor whose husband is diabetic. With that change you need not worry about the sugar.

Hello! If you cannot find a shortbread pie crust in your grocery stores, then you can always substitute for a graham cracker crust or you can make your own. We have an easy recipe for a shortbread-style pie crust called, "My Own Pie Crust."

P.S. The only reason I use some milk is because the pudding mixture thickens up and I may not have quite enough to spread on the top. But you do NOT make the pudding as directed on package. Just throw in dry like original recipe says.

Im having a hard time finding crushed pineapple in syrup. I went to 3 different store, no luck. Found it in juice but not in syrup. I found the slices in syrup, maybe I'll use that and chop it up first in the food processor. It has to be made with the syrup, not juice, right?

Hello! - Dole makes the crushed pineapple in heavy syrup, but if your local store doesn't carry this product then we recommend going with your idea of finely chopping the pineapple rings. Enjoy!

Thank you for your question! The Test Kitchen has not tried this recipe with other fruits. However, we believe it would work as long as you chop the fruit you are using small since the original recipe uses crushed pineapple. Also please make sure you use the syrup from the canned fruit since that is also part of the original recipe.

We added whipped cream to this pie for garnish. If you want to garnish your pie with a little whipped cream (and we think this is a good idea!) you'll just need to dollop a spoonful on each slice. One cup should do the trick. Enjoy!

I made this pie and it was delicious I did tweek the recipe though. I put a tablespoon of vanilla extract in the mix and instead of putting more pineapple on top I put fruit cocktail instead. I also put REAL whipped cream on top before I put the cherries on, and everyone LOVED IT. It turned out perfect! I will be making this again.. AND AGAIN : )

I have made this 2 times, first time I used graham cracker crust, mistake too flimsy doesn't hold together when cutting, otherwise outstanding! Second time I added a handful of macadamia nuts, used the shortbread crust, also grabbed banana Creme instead of vanilla but it was all good disappeared almost instantly

I made this last week. It was absolutely delicious. One thing I may try the next time is using a coconut greek yogurt instead of sour cream. Or 1/2 coconut cream pudding and 1/2 vanilla. I brought to a friends house & it was devoured. Will def make again!

I made this pie today, and we loved it so much, we went straight back for seconds! This pie was so refreshing, it will be a perfect pie for summer. I made it using one pkg of vanilla pudding mix (4 serving) and half a pkg of coconut cream pudding mix, since I didn't have a 6-serving pkg on hand. Also, I pureed a 20 can of sliced pineapple, since I didn't have any crushed pineapple in the pantry. We also put a dollop of Cool Whip on top, which really made it perfect!

This is delicous; have made it many times, so tasty and easy. For people with 'gluten problems,' you can make it without the crust, or make or buy a 'gluten-free crust.' I have a couple friends that can't have 'glutens' and I'm always figuring ways to surprise them with tasty foods. This was the best pie ever. I use the pineapple in its own juice and use a ready made graham cracker crust. I used sugar free pudding, and sour cream one time, and Greek plain yogurt the next. Very little difference in taste. There has been many raves for this, and will make it a lot when I need a fast dessert.

I made this and it is DELICIOUS. For the crust I could not find a ready made one,so I bought a box of Lorna Doone cookies and made my own crust. As for the pudding it is a large box of instant pudding 5.1 oz. 6-1/2 serving size. For the sour cream if you could't find an 8oz. container just measure 1 cup into your glass measuring cup. I also made it in a 7x11 glass baking pan. That was the right size for two people. If I am making it for a party I will double the recipe and use a 9x13 pan. Will definitly add this to my favorites.

The recipe does not say 6 oz. BUT says 6 serving size which makes a big difference. Perhaps this is the reason some pies did not set up.

Made this today for my church luncheon. Used 23 oz. bottle of cut pineapple in fruit syrup un drained. Used 6 oz of Greek non fat yougurt pineapple flavor instead of sour cream. Used sugar free vanilla pudding. As I used a graham cracker ready crust. I told the church it was light, not sugar free. It was delicious! Will try again with peaches and greek peach yogurt with the pudding with raspberries on top. really was very easy to make. Thank you.

Did you use a large box of instant vanilla pudding, a measured 8 oz of sour cream, and one can of dole cruised pineapple w juices or syrup? Your mixture should have been thick when you poured it into your pie crust. Then put it in the refrigerator for at least 2 hours or longer.

When I made this today, I noticed that it called for an 8 oz. container of sour cream. I have rarely seen any sour cream containers smaller than 16 oz. and thought you might have added an entire container rather than half...an easy mistake if you just notice 'a container of sour cream'. I also stirred the mixture quite a bit because instant pudding thickens when it is whipped. I hope mine turns out okay (it is in the refrigerator now).

With the size of everything we buy shrinking I checked the weight on the package of Jell-o pudding. Could not find a 6oz box of pudding. So I got a 5.1oz box (large box) and a 3.4oz box (small box) and just added some of the smaller box. Wow what a difference that made!!! I could tell if I had only used the large 5.1oz box of pudding that it would not have set up. Amazing how the little extra dab will do the trick! It should feel firm and start setting up as you mix it together. If you feel it is not just add some extra pudding out of the small box. It is an awesome pie. I even browned my coconut on a piece of foil in the oven and it looks like I just picked it up at the store.

The juice in the pineapple is what mixes with the DRY instant pudding instead of you adding milk to the pudding mix.

I think you needed to add more pudding. The large box of pudding only has 5.1oz in it and this calls for 6oz. Next time just get a small box of pudding and use "some" of it. Just keep adding a shake or two until it starts to get thick. Make sure it is thick before you put it in the pie shell.

Made it with crushed pineapple in its own juice, plain fat free Greek yogurt, a reduced fat graham cracker crust, and sugar free instant vanilla pudding. Excellent!

I'd use plain Greek yogurt instead of regular yogurt. I think the regular yogurt would be too runny and possibly not set right. Greek yogurt would have a consistency closer to sour cream.

I do not know where you live..I am in Ca. but all the big grocery chain markets have them. Usually in the baking section and sometimes in the frozen dessert sections. good luck

If you still can't find one then buy shortbread cookies...I love Archway (great taste and not expensive.) Mash in a zip lock plastic bag add melted butter and press into a pie pan to make the crust.

I have made this many times as just a 'salad' or dessert without the pie crust. I love the fact that it uses sour cream and not cool whip, which is just chemicals! This always gets raves when I take it to potlucks and family gatherings.

This sounds wonderful and easy and just delicious. I am a coconut lover and pineapple too. I can't wait to make this as so many people gave me ideas of how I would make mine. I will use pineapple in juice not syrup too much sugar. I will use 1 cup of coconut for inside the pie, I will use coconut pudding, and coconut yogart instead of sour cream and the pie crust graham cracker why bother to bake when you just buy a crust and have this made in a few minutes and chill and everyone should enjoy this. Great recipe for anytime of the year. The only thing I don't like is Maraschino Cherries. Maybe I would put chunked pineapple on top with coconut spinkled and for color put tangerine slices or sprinkle golden raisins on it.

Prepared shortbread cookie crusts can be purchased at most supermarkets...you'll find them with the graham cracker, & other types of cookie, crusts. :)

OMG! This is so easy and good. I didn't use the shortbread crust, instead I used crushed vanilla wafers (1 1/2 cups) 1 tbs sugar and 1/4 cut melted butter. Press in pie plate and bake at 350 for 8 minutes. Also I didn't have vanilla pudding so I used coconut cream. Will definitely make this many more times.

This recipe was sooo easy! I made the shortbread crust, mashed up one banana right in the pineapple mixture, added a little coconut and topped it with coconut, walnuts and marichino cherries. Very delicious!

Quick and Easy Shortbread Pie Crust Ingredients: 1 1/4 c flour 1/4 c sugar 1/2 c cold butter Directions: Mix flour and sugar. Cut butter into 1/4 in slices, and then cut into flour with a fork. Knead well and form into a ball. Flatten into pie plate with the palm of your hand, and then flatten against the sides of plate with your fingertips. Bake at 350 degrees (325 if using an electric oven) for approximately 10 min. until the dough is no longer glossy but slightly dry looking. When cool, fill with your favorite pie filling.

We loved this recipe. I used a Pillsbury pie crust (baked) and added two cut up bananas that I soaked in the drained off pineapple juice; I strained it well so not to make the crust soggy, and put the bananas on the bottom, then added the other mixture over top. I also added some chopped up pecans and marchiano cherries on top. Mmmmmgood!
