Peachy Pork Chops

This recipe was created totally by accident. A viewer told us he had just finished cooking pork chops and was carrying the pan over to the kitchen counter. Well, his wife had just opened a can of peaches for a fruit salad she was making and...crash! You guessed it - they had pork chops smothered in peaches. Instead of tossing the meal into the garbage, they shrugged their shoulders and dug in. Yum, what a taste! we're sure you'll agree that this dish is no accident.
What You'll Need
- 4 pork loin chops (1 to 2 pounds total), about 1 inch thick
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 (15-1/2 ounce) can sliced peaches in heavy syrup
- 2 tablespoons light brown sugar
- 1 teaspoon ground ginger
- 4 cups hot cooked rice
What to Do
- Season both sides of pork chops with salt and pepper.
- Heat oil in a large skillet over medium-high heat and brown pork chops 3 to 4 minutes per side. Stir in remaining ingredients except rice.
- Reduce heat to medium and simmer 15 to 20 minutes, or until pork chops are cooked through and sauce has thickened. Serve over rice.

I did this with a can of apple pie filling, minus the sugar, ginger vs peaches. not bad
