What could be better than yummy mashed potatoes? Yummy mashed potatoes with cheese and bacon! These Bacon Mashed Potatoes are a hit with everyone. They're show stoppers!

What You'll Need

  • 1 (22-ounce) package frozen mashed potatoes
  • 1 (8-ounce) package finely shredded Colby-Monterey Jack cheese
  • 7 bacon slices, cooked and crumbled
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup butter, softened
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

What to Do

  1. Prepare mashed potatoes according to package directions.

  2. Stir in cheese and remaining ingredients. Serve immediately.

Notes

These super-easy mashed potatoes can easily be lightened. Substitute shredded light Mexican cheese blend, reduced-fat bacon, and nonfat sour cream for the regular products. You can even cut the amount of butter in half if you want to!
