What You'll Need
- 1 (22-ounce) package frozen mashed potatoes
- 1 (8-ounce) package finely shredded Colby-Monterey Jack cheese
- 7 bacon slices, cooked and crumbled
- 4 green onions, chopped
- 2 cloves garlic, minced
- 1/2 cup sour cream
- 1/4 cup butter, softened
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
What to Do
- Prepare mashed potatoes according to package directions.
- Stir in cheese and remaining ingredients. Serve immediately.
Notes
These super-easy mashed potatoes can easily be lightened. Substitute shredded light Mexican cheese blend, reduced-fat bacon, and nonfat sour cream for the regular products. You can even cut the amount of butter in half if you want to!
