Cheddar Rice Bake

Serve our Cheddar Rice Bake bubblin' hot from the oven, and expect requests for second helpings when your gang tastes this comforting cheesy go-along casserole.
What You'll Need
- 1 1/2 cup instant rice
- 1 1/2 cup milk
- 1/4 cup (1/2 stick) butter, melted
- 1 cup shredded white cheddar cheese (see Note)
- 2 tablespoons finely chopped fresh parsley
- 2 eggs
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
What to Do
- Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
- In a large bowl, combine all ingredients; mix well, then pour into baking dish.
- Bake 30 to 35 minutes, or until golden and the rice is tender. Serve immediately.
Notes
The Test Kitchen used white cheddar cheese in this recipe, but yellow cheddar is just as tasty!

Flavorless. All I could taste was the rice the toasted panko bread crumb topping I added. I even added Worcestershire sauce dry mustard. I ate one serving tossed the rest, something I never do. The one thing I should have done was substitute chicken broth for at least half the milk. That would have helped a bit, I'm sure.

I will try this recipe, but I'm not really certain what the eggs bring to the dish, I'm an egg lover.

My understanding is that "casserole dish" or "baking dish" refers to glass, stoneware or pyrex. When the reference is to a "pan," I always believe it means a metal pan. I like glass/pyrex for ease of cleanup and being able to see the color of the bottom of a baked dish.

This is exactly correct! A baking or casserole dish indicates glass or pyrex, while a baking pan means to use metal.

Question for you on baking dishes. Now when you say "casserole dish" or "baking dish" are you talking about either pyrex or glass? When you are talking about a pan/dish to put something in for the oven; is there a difference between something metal and something glass? 2. How do I mince a clove of garlic?

lass baking dishes hold heat longer. the real benefit is after the casserole is put on the table it will stay hot longer

I once read if you are using dark non-stick or glass, to lower the oven temperature by 25 degrees. Never tried it. Maybe now is the time.

Hey, you can use a garlic press to mince garlic (found at any store), or press the flat end of a knife against the garlic clove and smash it, then chop it. Simple as that!
