    What You'll Need

    • 1/4 cup vegetable oil
    • 1 1/2 pound refrigerated or frozen shredded potatoes, thawed if frozen
    • 1 cup chopped onion
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 4 eggs, beaten

    What to Do

    1. In a 10-inch skillet over medium-high heat, heat oil until hot. Add potatoes, onion, salt, and pepper and cook 10 to 15 minutes or until golden brown, stirring occasionally.
    2. Pour eggs over potatoes, cover, and cook 10 to 12 more minutes, or until eggs are set. Cut into wedges and serve.

    After pouring eggs onto potatoes do you turn it over , I noticed the top was browned , or are the eggs on bottom

    In the photo above, we flipped it out of the pan onto a serving plate. That is one option, or you can serve it right from the pan. Just be careful using a knife on your non-stick pans. Enjoy!

    Feel free to add veggies, ham, etc for added flavor. Also, you can spice it up by using your favorite condiment or spice....really good and so very easy to prepare! Enjoy!
