Garlic Roasted Potatoes

These are one better than just regular baked potatoes because they are more homemade tasting!
What You'll Need
- 2 1/2 to 3 pounds small potatoes, rinsed and quartered (skins on)
- 1/4 cup olive oil
- 1 head garlic, sliced in half crosswise and separated
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
What to Do
- Preheat oven to 450°F.
- Place potatoes in a 9 x 13-inch baking dish. Cover the potatoes with the oil, garlic, salt, and pepper; mix to coat potatoes.
- Bake for 50 to 60 minutes, turning occasionally, until golden brown.
- Discard garlic before serving.
Notes
This works just as well with regular-sized potatoes as it does with the little creamer type. Just cut them into large chunks.
