Mushroom lovers take heart! Our Test Kitchen went all out to create a hearty and comforting casserole made with a combo of rice, mushrooms and a few basics. Our Mushroom Rice Bake will fit any of your favorite main dishes perfectly! That makes it a side dish worth remembering for dinners to come.
What You'll Need
- 1 1/2 cup long- or whole-grain rice, uncooked
- 2 cups sliced fresh mushrooms (about 8 ounces)
- 1 small onion, chopped
- 1 (10-1/2-ounce) can condensed beef broth
- 1 (10-3/4-ounce) can condensed cream of mushroom soup
- 1/2 stick (.25 cup) butter, melted
- 1/2 teaspoon black pepper
What to Do
- Preheat oven to 375 degrees F. Coat a 2-quart casserole dish with cooking spray; set aside.
- In a medium bowl, combine all ingredients; mix well. Spoon mixture into prepared casserole dish.
- Cover and bake 50 to 55 minutes, or until liquid is absorbed and rice is tender.

Campbells makes a beef consomme...so do other producers. It has a deep flavor with herb and wine accents. It is a concentrate so you can use it for this recipe.

I have made this for years only I use chicken broth add chopped chicken or turkey. After Thanksgiving, I chop the turkey into 1 cup amounts freeze it. This makes adding it to this recipe a breeze.

This is a great recipe--perfectly creamy! I made some small alterations based on what I had on hand Instead of adding the melted butter, I instead sauteed the onions mushrooms in oil. Then poured the onions/ mushrooms pan drippings w/ oil into the mix. I added 2 cloves of minced garlic, sauteed. I didn't have beef broth, so I added 1 2/3 cup milk 1.5 teaspoons chicken bouillon powder mix. I also had about 1C chopped cooked chicken to throw in. My baking time took about 80 minutes @ 375, while covered w/ tinfoil (but I had more add-ins liquid than the original recipe).

This is very good. I changed it by using chicken broth and cream of chicken soup, and served it with herb baked chicken thighs.

the recipe says to cover, but when I watched the video they put it in the oven uncovered. Well I'm making this today and I will cover. I know it's going to be good. I was also thinking about put some veg in, maybe frozen peas or what ever. Will make today as is and then the next time I will try some other things also. Mr food is always great.

I think the folks who are always asking for nutritional info just need to put on their big girl panties and figure it out but... I really would like some indicator or something for recipes that freeze well. Cooking for two is hard when using canned soups etc unless I can freeze some for another meal.

Made this yesterday and it was simply delicious key is to use real butter and fresh mucshrooms only thing I added was a little salt Excellnet recipe and easy too!

The rice in this recipe begins uncooked. All of the liquid in this recipe will cook the rice. By doing this, you eliminate the step of cooking the rice first, therefore making the recipe easier! Enjoy!

If you think the rice may be hard then use one of those already cooked Big Ben rice packets!!! I'm going to try it with the already cooked packets! It definitely looks good

I think you need to cook the rice before adding it to the recipe. I saw the prepared on TV today and the rice was cooked.

I suggest using one of those Big Ben already cooked rice packets. But I would put the cooked rice in the last 15-20 minutes or you might have rice mush! :)

THIS RECIPE SOUNDS SO YUMMY, BUT I WONDER IF IT WOULD HURT TO ADD SOME HAMBURGER? AND MAYBE A LITTLE GARLIC SEASONING WOULD BE GOOD. I'M GOING TO TRY IT THAT WAY, AND THEN REPORT IF IT TURNED OUT OK. :-)

I use garlic powder in most of my dishes. The hamburger sound good and it would be a main dish instead of a side.

by using hamburger, the fat dripping will be in the food and i believe that's not really good for you.

Brown rice will take quite a bit longer to cook in this casserole just use the while uncooked rice it is delicious in this recipe if anyone's rice came out hard they need to Review this recipe for instructions as the rice cooks in the casserole and absorbs the flavor I have made this 3 times and comes out perfect everytime Of course I rinse my rice well in cold water, first drain well and proceed

Used brown rice because that's what I had on hand. Definitely needs longer cooking time and therefore more liquid, I'm going to try making it again and adding another 1/4 cup broth.
