There's nothing wrong with eating a baked potato that you've cooked in foil over an open fire, but after a few nights of that you're going to be ready for an alternative. And here it is! You simply wrap these up and onto the heat they go! It couldn't be easier or taste better! (Of course, when we want that campfire taste at home, we can make these in the oven.)

What You'll Need

  • 6 medium potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/2 cup (1 stick) butter, melted
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 1/3 cup real bacon bits
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. Prepare a barbecue fire with a grill rack (or preheat the oven to 375 degrees). Coat six 12- x 24-inch pieces of aluminum foil with cooking spray.

  2. In a large bowl, combine all the ingredients; mix well. Place equal amounts of the potato mixture on each piece of foil. Seal each packet and place on the grill rack over a barbecue fire (or on a large baking sheet).

  3. Cook for 55 to 60 minutes, or until the potatoes are tender.

Notes

These packets can be prepared ahead of time and brought along in a cooler. Then all you have to do is place the packets on a grill over medium-high heat or directly over a campfire until the potatoes are tender.

This is very good but in my family foil package potatoes means something quite different medium to large baking potatoes thinly sliced or each cut into thin wedges baseball sized onion or larger if you love onion as we do cut in half pole stem to root then thnly sliced separated Spread potatoes over large sheet of foil Scatter onion strips over potatoes Season generously with salt pepper or Mrs Dash's Table Blend for a no sodium option Drizzle with cup extra virgin olive oil tablespoons melted butter Seal tightly Place on rimmed baking sheet in case of leaks Cook about to minutes on a charcol grill or to minutes in a oven I find them tastier than those with bacon cheese - and they are actually quite a bit healthier for you It helps to be out of the kitchen while these cook - the aroma of onion in EVOORead More really gets the mouth watering We love these potatoes with grilled chicken or a roasted whole chicken or turkey breast Also wonderful with pork chops or beef steak For the ultimate in self-indulgence try them as a side with a pulled pork sandwich big tossed green salad And a great big brownie sundae for dessert

Absolutely amazing! I didn't have bacon on hand, so I skipped it, and I didn't have Cheddar, so I used Cheddar Jack. After about 20 minutes the house smelled so wonderful, it was torture to wait for dinner to get done. I'm slightly dreading the next I'm making them, WITH the bacon. It's going to smell even better and be even more torturous. Just one thing, make sure you put the foil packets on a rimmed cookie sheet, all that butter made quite a mess on the cookie sheet.
