Maple Grilled Sweet Potatoes

Sweet potatoes add a special touch to any meal, so why not grill them along with everything else?
What You'll Need
- 1/2 cup maple syrup
- 1/2 cup pineapple juice
- 1/4 cup honey
- 4 large sweet potatoes, peeled and cut into 1/2-inch thick slices
What to Do
- In a large saucepan, combine the maple syrup, pineapple juice, and honey. Add the sweet potato slices and bring the mixture to a boil over medium heat on the stovetop. Reduce the heat to low and simmer for 12 to 15 minutes, or until the potatoes are just fork tender.
- Preheat the grill to medium-high heat. Remove the potatoes to the grill for 4 to 6 minutes, until browned, turning frequently and basting with the remaining liquid.
Notes
You can cook these potatoes and keep them in the refrigerator, covered, for up to 2 days before you plan to grill them. Then follow the directions for grilling as above.
