Mediterranean Potatoes

Lots of seasoning, lots of OOH IT'S SO GOOD!!
What You'll Need
- 1 tablespoon olive oil
- 1 medium-sized onion, chopped (about 1 cup)
- 1 tablespoon chopped garlic
- 1 teaspoon salt
- 1 (28-ounce) can chunked tomatoes, drained
- 1/2 cup dry white wine
- 2 teaspoons sugar
- 2 teaspoons Italian seasoning
- 1/4 teaspoon hot pepper sauce
- 1/4 teaspoon pepper
- 5 medium-sized potatoes (2 pounds), peeled and quartered
What to Do
- In a large skillet, heat the oil over medium heat; sauté the onion and garlic just until the onion is soft. Add the remaining ingredients except the potatoes and cook for 15 minutes.
- Meanwhile, in a large saucepan, cook the potatoes in boiling salted water until tender; drain.
- Place the potatoes in an 8-inch square baking dish. Spoon the sauce over the cooked potatoes. Serve immediately or keep warm in a 250 degree F. oven until ready to use.
- Makes 3 cups of sauce.
Notes
You can also serve this sauce over mashed or baked potatoes.
