Nutty Raisin Couscous

When you're tired of plain old rice, shake things up with couscous. You'll find it's just what you need when you want a quick side. It cooks in only 5 minutes, and the combination of raisins and pine nuts in this version will have 'em comin' back for more.
What You'll Need
- 1 1/2 cup chicken broth
- 1 1/2 cup water
- 1/2 cup raisins
- 2 tablespoons butter or olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cup uncooked couscous
- 1/4 cup pine nuts, toasted
What to Do
- Stir together first 6 ingredients in a saucepan; bring to a boil, stirring occasionally.
- Stir in couscous; cover, remove from heat, and let stand 5 minutes or until liquid is absorbed. Fluff couscous with a fork, and sprinkle with pine nuts. Serve immediately.
