Risotto in the Microwave

Put your hands together for this Risotto in the Microwave, ladies and gentlemen because this one's a show stopper! Easy and SO tasty, this dish is bound to steal the show... or the hearts of the people gathered around your table!
What You'll Need
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup minced onion
- 1 cup Arborio rice or long- or whole-grain rice
- 3 cups chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1/4 teaspoon pepper
What to Do
- Heat butter and oil in microwave-safe 1-1/2-quart glass or ceramic dish, uncovered, at HIGH 1 minute and 15 seconds to 2 minutes. Add onion; stir well. Cover and cook at HIGH 45 seconds to 1 minute.
- Add rice, stirring well. Cover and cook at HIGH 3 to 4 minutes. Stir in chicken broth, and cook, uncovered, at HIGH 9 minutes. Stir well, and cook, uncovered, at HIGH 7 to 9 minutes. Remove from microwave oven, and let stand 5 minutes.
- Stir in Parmesan cheese and pepper. Serve immediately.
Notes
We love the smooth and creamy texture of traditional risotto, but we're too impatient to stand there and stir it the whole time. That's why we came up with this magic microwave method. You just give it a few quick stirs, and the microwave does the rest! True risotto is made with Arborio rice, but if you can't find it, substitute long- or whole-grain rice.
