Salt City Potatoes

"Salt City" (Syracuse, New York) is like my second home, so when I make these it's like coming home to an old friend. I bet you'll agree!
What You'll Need
- 3 pounds small new potatoes
- 4 quarts water
- 1 cup salt
- 1/2 cup (1 stick) butter
What to Do
- Place the potatoes and water in a large pot. Pour the salt over the potatoes, cover, and bring to a boil. Reduce heat to medium and cook for 25 minutes or until the potatoes are fork tender.
- Melt the butter and place it in a large bowl. Dip the hot potatoes in the melted butter and serve.
Notes
For that authentic Central New York flavor, use an additional 1/2 cup of salt. And if you have any of these left over, they're perfect for making home fries.
