Special Roasted Potatoes

Even when we're not in Rome, it pays to do what the Romans do - at least when it comes to the seasonings and little extras that can really make a dish special!
What You'll Need
- 1/4 cup olive oil
- 2 tablespoons chopped fresh basil
- 1 tablespoon minced garlic
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 large red potatoes (about 1¼ pounds total), cut into ¼-inch slices
- 2 bell peppers (1 red and 1 green), cut into 1-inch strips
- 3 ripe tomatoes, cut into wedges
What to Do

Preheat oven to 450 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. In a large bowl, combine oil, basil, garlic, oregano, salt, and black pepper.

Add potatoes, bell peppers, and tomatoes and toss until coated and well mixed.

Spoon mixture into prepared baking dish and bake 40 to 45 minutes, or until vegetables are tender.
Notes
Feel free to add your favorite vegetables, including sliced eggplant, portobello mushrooms, or even yellow or orange bell peppers.
