Have we got a dinnertime solution for you! This satisfying Spicy Couscous side dish is one that will amp up any meal in a jiffy.
What You'll Need
- 1 cup chicken broth
- 1/4 cup sliced scallions
- 1 (4.5-ounce) can chopped green chilies, undrained
- 2/3 cup couscous, uncooked (see note)
What to Do
- Combine first 3 ingredients in a medium saucepan; bring to a boil.
- Remove saucepan from heat, and stir in couscous. Cover and let stand 5 minutes. Fluff with a fork before serving.
Notes
Couscous is a tiny pasta that is made from semolina wheat. It's a great alternative to rice and is gaining popularity because it cooks so quickly - in 5 minutes!? Chicken broth adds flavor to rice, grits, and - as done here - couscous. When any grain recipe calls for water, you can easily substitute an equal amount of broth.
