What You'll Need
- 1 (4-serving) package instant vanilla pudding and pie filling
- 4 cups cold cooked rice
- 1/2 cup raisins
What to Do
- Prepare pudding according to package instructions. Place pudding in a medium bowl and mix in rice and raisins.
- Place in 6 individual serving glasses and serve immediately.
Notes
You can use any rice in this quick rice pudding recipe, but we suggest using enriched whole-grain white rice. If you prepare this in advance, store it in the refrigerator and mix in additional prepared instant pudding just before serving.

This is an easy rice pudding recipe, and it is wonderful! I do like my rice pudding warm, with cinnamon sprinkled on top. This is different from the old fashioned baked rice pudding recipes, but it's fine if you want a quick recipe.

I love watching Mr. Food on the news. However, I'm a new cook and sometimes I don't understand what it is I'm supposed to do to make the delicious foods you show on TV. Like with Zucchini bread. How does one grate such a thing? Thanks

I used canned crushed pineapple for a variation. I let the pineapple drain a bit; and used the liquid in my pudding mix. I combined the crushed pineapple into the cold rice. yummy!

I have made this with French vanilla pudding and coconut pudding, both were just as good as baked rice pudding

Does anyone make baked rice pudding? My Granny made it with leftover rice that had been creamed a little first in some milk...she stirred in some egg and milk and vanilla and then baked it. This is what my mom remembers her doing, we don't have a recipe...and I haven't been able to replicate it. I think she used cinnamon and raisins and maybe a little butter too.

1/4 cup (1/2 stick) butter 1/2 cup sugar 3 eggs 1/2 teaspoon ground cinnamon 1/2 teaspoon salt 1 pint sour cream 1 cup raisins 1/3 cup chopped maraschino cherries 3 cups cooked long- or whole-grain rice (not instant) Instructions Preheat oven to 350 degrees F. Coat a 1-1/2-quart casserole dish with cooking spray. In a large bowl, cream butter and sugar. With an electric mixer, beat in eggs one at a time. Add remaining ingredients and mix well. This is my family's recipe. Came from Ireland with my great-grandmother: RICE PUDDING ENGLISH STYLE (baked) 1 CUP OF UNCOOKED RICE (USE LONG GRAIN WHITE ONLY) 6 LG. EGGS 1 QT MILK (WHOLE OR 2%) 1 CAN EVAPORATED MILK (I USE SKIM BUT YOU CAN USE REG.) 1 CUP OF SUGAR DIVIDED VANILLA (AT LEAST 1TBS) CINNAMON NUTMEG RAISINS (OPTIONAL) PREHEAT OVEN TO 370 DEGREES BOIL RICE ACCORDING TO PKG. DIRECTIONS. PUT HOT RICE IN DEEP BAKING DISH. ADD CUP OF SUGAR, CINNAMON AND RAISINS TO HOT RICE. IN MIXING BOWL, BEAT EGGS, AND BOTH TYPES OF MILK TOGETHER. ADD REST OF SUGAR, VANILLA, CINNAMON AND NUTMEG. MIX WELL. POUR OVER RICE MIXTURE AND MIX THROUGH. SPRINKLE TOP WITH SOME NUTMEG. BAKE 1 HR. COOL ON RACK TO ROOM TEMP. REFRIGERATE. Hope this helps.

My mama always baked her rice pudding and it was delicious, just as your grandmother did my mama used cooked rice a few eggs, vanilla, milk and evaporated milk, sugar and raisins, nutmeg and cinnamon. Sometimes I will add a little butter, but I really prefer to bake rice pudding than to cook it over the stove, although nothing is wrong with cooking it that way.

perfect for those that dont or cant wait for hours. Only thing I would do is add coconut to the pudding with shaved chocolate for garnish (if am having a "sweet tooth" moment)

this is not rice pudding ! This is Vanilla Pudding with rice in it ! You can do better than this Can't you ?

Very easy to make. & taste great. I tried this. We don't like raisins. SO I left them out. Taste the same as that long process of baking it. This is without a doubt. The best & easy way to do this. I put netmeg in mine. I just sprinkled some in & stired to taste. Blueeyes, Virginia beach, Va.
