Crab Tortellini Salad

Crab Tortellini Salad makes a scrumptious snack or lunch. It's very creamy and rich, and a squirt of lemon injects some tang.
What You'll Need
- 1 (19-ounce) package frozen cheese tortellini
- 1/2 cup mayonnaise
- 1/4 cup heavy cream
- 1 (8-ounce) package imitation crabmeat, flaked or 1 (6-ounce) can crabmeat, drained and flaked
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do

Cook tortellini according to package directions; drain, rinse, and drain again.

In a large bowl, combine tortellini and remaining ingredients; mix well.
- Cover, and chill at least 2 hours before serving.

This is a favorite salad of mine, even with the imitation crab. I happen to like imitation crab. It is real fish. And it's easier on the budget. I can't afford real crab. It was $26 for a pint at Sam's Club last week. The cream with a nice addition to thin out the mayonnaise and it keeps the salad creamier and it doesn't Clump up after it chills. Thanks for the recipe!

If you prefer not to use tortellini, you can substitute another cheese filled pasta or even a plain pasta. Of course then it wouldn't be a tortellini salad, but if you like it, try it! Enjoy!

When referencing imitation crab, the word 'krab' shoudl be used to indicate it

I used sour cream instead of the heavy cream. Inour opinion: much better.

I think I'll try a lb. of salad shrimp. Low fat cream, but it is only a 1/4 cup but then I'll have a lot heavy cream left

Is there anything I can substitute for the heavy cream to lighten up this recipe?

You can substitute a lower-fat milk. I don't know that I would use skim milk, that would probably be too watery. Please keep in mind that we have only tested these recipes in the Mr. Food Test Kitchen the way they are written. So, we can not guarantee the results. Enjoy!

You could try Smart Balance milk.The fat free isn't watery& "blue" like skim milk

I use fat free half and half in other recipes to mix with mayo and it works well
