Easy Slow Cooker Pork Carnitas

- Freezer Instructions: Follow steps 1-3. Allow pork to cool. Place pork in freezer-safe container and freeze. When ready to eat, place in fridge to thaw for 24 hours in advance. Then reheat, assemble, and enjoy!

Ingredients
- 2 1/2 pounds boneless pork chops, pork roast or tenderloin
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 cup taco sauce
Instructions
- Place all ingredients in a slow cooker.
- Cook on high for 5-6 hours or low for 7-8 hours.
- Shred meat with a fork.
- Serve in tortillas with cheese, lettuce and other toppings that you like.

I worked with quite a few people from Mexico that would always bring some of the best food. I loved trying the things they brought and they brought a version of this in that was really tasty. I am glad to try this recipe out in hopes that it is just as good. Thank you for sharing this recipe.

Forgot to add that the tortillas get rolled up to make an enchilada. Sorry for any confusion.

Made this and froze in Ziplock bag. A few months later defrosted, added a bag of frozen Southwestern Mixed Vegetables and heated until veggies warmed through. Put a good serving on large flour tortillas, added some shredded Mexican Blend Cheese, put in a casserole seam side down and heated in 375 oven for 25 minutes. Served with sour cream. Tortillas were crispy, filling was wonderful, great enchiladas. You could top with salsa in the oven, but I don't like mushy enchiladas.

Tacos are my absolute favorite, and this was like a pork taco. Thought it was o.k. I'm just not crazy about pork though

This recipe is delicious. Tastes like real homemade Mexican food. I use Lawry's package taco sauce.

Ortega makes a smooth taco sauce in mild, medium or hot. It is not chunky like salsa and has a more concentrated flavor. I hope this helps!

Ortega is fine, but for a more authentic taste, you might try El Pato. It is generally sold in the Mexican food section of most grocers.
