The next time you get the urge to snack, why not bake up a batch of our Baked Zucchini Chips? These are a healthier way to enjoy the satisfying crunch of delicious squash! Whether you make these zucchini chips for parties or for eating alongside dinner, their fresh from the garden taste will have everyone asking for more! 

What You'll Need

  • 1/4 cup Italian-seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons milk
  • 2 zucchini, cut into 1/4-inch slices

What to Do

  1. Preheat oven to 425 degrees F. Coat an oven-proof wire rack with cooking spray then place on a rimmed baking sheet.
     
  2. In a medium bowl, combine bread crumbs, Parmesan cheese, garlic powder, salt, and pepper. Place milk in a shallow bowl.
     
  3. Dip zucchini slices in milk then coat with bread crumb mixture, making sure to pat them well so the breading sticks nicely. Arrange breaded zucchini on wire rack.
     
  4. Bake 25 to 30 minutes, or until browned and crisp. Serve immediately.

This baked zucchini chips recipe really sounds yummy. I guess when the salty craving hits, this would be a really good substitute. I would guess the same could be done to the yellow squash as well.

It is the time of the year when squashes like Zucchini are readily available. We eat tons of it at our house. The kids love it raw and will gobble it up in a mix up of streamed veggies. This recipe is another great way to serve up the healthy vegetable.

Oh my goodness! I loved these! I really like the zucchini fries on this website, but these are even better! The zucchini fries are a little more fragile than these chips. I added a little bit or red pepper flakes to the coating for a little heat. We love spicy foods at my house!

I have a question concerning storage. How long would these stay crisp and fresh in a ziplock bag?

These zucchini chips wont stay crisp in a bag for more then a day because were using fresh zucchini that has not been dried out. Moisture will come out of zucchini and theyll become soggy. These are best served immediately or in the same day.

They are great,but I love Zucini fixed ay wayy. Always plant extra and let some get large to stuff.Also make Kale chips that are healthier than potatoe chips. Turnip fries are great too.

can you use a baking sheet instead of a wire rack?

Put the wire rack in or on the cookies sheet that way both sides will cook and brown

I use the rack out of my bbq grill. I don't have a regular baking rack.

If you don't have a rack and have to use just the cookie sheet, I'd suggest turning the zucchini half-way through the cooking time.
