Countryside Lentil Soup

Hearty yet healthy, our stick-to-your-ribs, Tuscan-inspired recipe for Countryside Lentil soup is pure comfort in a bowl! Put out a basket of crusty whole grain bread, and this one rounds out perfectly as a main dish meal.
What You'll Need
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 cups water
- 5 cups chicken broth
- 1 (12-ounce) package dried lentils, washed and drained
- 3 carrots, finely chopped
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- In a soup pot over medium heat, heat oil; saute onion and garlic 3 minutes. Add remaining ingredients; bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer 50 minutes, or until lentils are tender. Discard bay leaf before serving.
Notes
- For a heartier soup, add about 1 cup chopped smoked ham or leftover cooked beef.

One of our favorite soups.....so delicious and hearty! With "all" the add-ins it tastes just like an expensive bean soup from a local deli (but better using the lentils). Add ins 1-4 cup soy sauce, 3 Tbsp brown sugar, 2 Tbsp molasses, 2 tsp liquid smoke, diced ham, 15 oz can fire roasted tomatoes, few shakes of red pepper flakes. I slow cook everything on low for 6-8 hours until lentils are tender. Everyone that I've made this soup for has asked for the recipe. Try it this way...........it won't disappoint!

I have made this many times. The only thing I always add is nutmeg. This dish is wonderful on cold winter nights with crusty bread. It also is wonderful made in a crockpot. The crockpot gives this dish the time for the favors to incorporate.

Used a 49.5 oz can of chix broth rather than adding water to two cans of broth. A wonderful, tasty, inexpensive main dish meal for 6-8 servings. Entire cost is well under $5.00 for the 6 servings, including dinner roll or other bread. We love any type of main dish soup recipes and this one is quite good and great for several lunches the next few days.

This is similar to the lentil soup I make except I use beef cut in tiny chunks, beef broth and add celery and onions in addition to the carrots. I also sometimes add finely chopped mushrooms. Yum.
