Mediterranean Turkey Salad

For a refreshing spin on an old favorite, this Mediterranean Turkey Salad has got it all. Cherry tomatoes, black olives, and turkey cutlets make this one a Mediterranean medley of flavors!
What You'll Need
- 1/2 cup olive oil, divided
- 4 turkey cutlets (about 1 pound)
- 3 scallions, sliced
- 1/4 teaspoon black pepper
- 3 tablespoons wine vinegar, divided
- 1 teaspoon Dijon -style mustard
- 2 tablespoons mayonnaise
- 1 cup cherry tomatoes, cut in half
- 1/2 cup black olives, rinsed
- 2 tablespoons chopped fresh parsley
What to Do
- In a large skillet, heat 2 tablespoons of the oil over medium-high heat; add the turkey cutlets and saut until lightly browned and no pink remains, about 5 minutes on each side.
- Cool and cut into cubes. In a large bowl, combine the turkey cubes with the scallions and sprinkle with pepper.
- In a small bowl, mix 2 tablespoons of the olive oil and I tablespoon of the wine vinegar; stir into the turkey mixture and marinate, covered, for 15 minutes in the refrigerator.
- Meanwhile, in a small bowl, whisk together the mustard, mayonnaise, and remaining oil and vinegar. Pour the mustard-mayonnaise mixture over the marinated turkey and stir. Add the cherry tomatoes, olive, and parsley; toss.
Notes
Serve over romaine lettuce leaves.
