Peachy Grilled Cornish Hens

Fancy, fancy - and, yes, done right on the grill with hardly any work. Yup, these'll taste like you slaved all day...so let them think you did!
What You'll Need
- 3 Cornish hens (1 to 1-1/2 pounds each), split
- 2/3 cup peach preserves
- 2 tablespoons amaretto, or apricot or peach liqueur
- 1/2 teaspoon ground cinnamon
- 1/2 cup sliced almonds (optional)
What to Do
- Preheat the grill to medium-high heat. Place each hen half on a piece of heavy-duty aluminum foil.
- In a small bowl, combine the preserves, liqueur, and the cinnamon. Brush the mixture evenly over each half and wrap the halves tightly in the foil.
- Grill for 25 to 30 minutes, or until the juices run clear and no pink remains. Garnish with the almonds, if desired.
Notes
Cornish hens are available in the fresh poultry department or next to the turkeys in the freezer section of your supermarket. And since they only weigh 1 to 11/2 pounds, they're perfect on the grill because they're quick-cookers.
