But it doesn't have to be a holiday for you to enjoy this creamy side dish. Whip up this butternut squash recipe on any fall day and you'll be hearing "ooh"s and "aah"s all around the dinner table. What's not to love about an easy fall side dish as rich and creamy as this?

What You'll Need

  • 2 medium butternut squash
  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup maple syrup (optional)

What to Do

  1. Preheat oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
     
  2. Place squash on baking sheet and bake 60 to 70 minutes, or until a knife can be inserted into squash. Remove from oven and let cool slightly, 15 to 20 minutes.
     
  3. Cut the squash in half lengthwise; scoop out the seeds and discard. Using a spoon, remove the flesh and place in a casserole dish. Add the remaining ingredients and mix well. Serve immediately or refrigerate and reheat at a later time.

My first time trying butternut squash. I didn't change a thing it was absolutely delicious.

Yummy yum yum. I don't like all the sugar on top of sweet potato casserole and this recipe with butternut squash was a great alternative on my Thanksgiving table.

Everybody keeps talking about Acorn Squash Which is very good. But this recpie is for Butternut squash????

I have been preparing acorn squash like this for years. I introduced my husband to it and he loves it. A lot of people don't know what an acorn squash is (especially at the grocery store register. Try it.

The best way to cook acorn squash is to cut in half, scoop out the seeds. cut tiny bit off of the bottom side to keep the squash from rolling. Fill both cups with butter, brown sugar and nuts if you want them; Bake at 350 for about an hour and may longer depending on the size of the squash. I like mine well done, soft. Very Good!!

What's the best way to cook acorn squash? And when do you know it is done enough to eat? Do you cook it like the butternut squash?
