What can I use instead of light beer in this recipe for someone that is gluten intolerant? I know I can use gluten free flour.

I have not tried this, but one online site said that ginger ale could be used instead of a light beer. There are also non-alcoholic beers that one could try if it's the alcohol content that is of concern. Hope this helps. If you try ginger ale, I hope you'll let all of us know if it worked.

One cup of Bisquick can be substituted by a mix of one cup of flour, 1 teaspoons of baking powder, teaspoon of salt, and 1 tablespoon of oil or melted butter. What do you think?

Would you be able to use just flour? To me the Bisquick makes buns, bread, etc: just too dry.
