Our souffle-like Carrot Bake is the perfect go-along for any main dish meal and will surely impress company. You'll never guess the shortcut secret to its smooth and velvety texture.

What You'll Need

  • 3 (4-ounce) jars carrot baby food
  • 1 stick butter, melted
  • 3 eggs
  • 1 cup all-purpose flour
  • 1 cup packed light brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

What to Do

  1. Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
     
  2. In a large bowl, combine carrots and butter; mix well. Add remaining ingredients; mix until well blended then pour into baking dish.
     
  3. Bake 35 to 40 minutes, or until a toothpick inserted in center comes out clean.

Notes

  • Your group will love this just the way it is but, for a change of pace, try baby-food squash, pumpkin or corn in place of the carrots.

Baby food? I'm not really sure how I feel about going that route but I'm not opposed to pureeing my own carrots. This carrot bake is so beautiful to look at in the picture, am I right to assume it takes on somewhat of a texture between pumpkin pie and cake...or am I mistaken? I'm just trying to figure out what I'd need to add if it was too creamy because I'm all about texture in my food. I do like the suggestion that was mentioned in the comments, of adding pecans and raisins...yum!

Hello again! Yes, you could puree your own carrots! As for the texture, yes, between the pumpkin pie and cake it has great texture! And feel free to add nuts and raisins! Yum!

I used splenda diet brown sugar in this recipe because my husband is diabetic. It was delicious. Definitely a keeper.

can self rising flour be used instead in place of the baking soda and powder ?

Hello! - While we haven't tested the recipe with self-rising flour instead of baking soda and powder, we do believe that it will work just fine.

I USED CANNED CARROTS AND JUST BLENDED INTO THE BUTTER AND EGGS. THE GUY THAT WORKS FOR US ATE A BUNCH OF IT. I PUT IT INTO 12 PAPER BOATS. ONLY HAVE TWO LEFT FOR TODAY. WILL MAKE AGAIN, BUT I THINK I'LL ADD A LITTLE CINNAMON AND MAYBE PECANS. THANKS AGAIN MR. FOOD.

in the video you state to add salt but the recipe does not list salt or how much to add

I have just made this a few hours ago and let it cool. Ohh it is so moist and have already had 3 pieces of it. I am saving the rest to take with me to a ladies gathering tomorrow and hope they enjoy it as much as I did. THANKS FOR THE RECIPE.

I HAVE MADE THIS THREE TIMES ALREADY. ALTHOUGH I DO NOT HAVE A BABY NOW, THEY"RE ALL GROWN I JUST USED FRESH CARROTS THE FIRST TWO TIMES AND CANNED CARROTS WHICH I ALREADY HAD THE THIRD TIME FOR THANKSGIVING. THIS TIME I ADDED RAISINS AND PECANS AND IT TASTED LIKE A CARROT CAKE WITHOUT ANY FROSTING NEEDED. COOL WHIP WOULD BE GREAT. I WILL TRY THAT NEXT TIME. THIS IS A GREAT AND EASY RECIPE TO MAKE FOR ANY OCCASION. I WILL TRY OTHER THINGS LIKE APPLESAUCE OR SWEET POTATOES. I MAY BUY BABY FOOD AND TRY ITWITH THAT.

to the one who wants to use chia seed for their baby, i would def. rethink that. just saying!

I made this with sweet potatoes. I didn't have baby food but put a can of sweet potatoes in the magic bullet. juice included and it measured to the 12 0z. I needed. It was like bread pudding. Next time I will add 1/4 cup of raisins and 1/4 cup of chopped pecans and eat with whipped cream or half and half on it as a dessert.

SO GOOD! Tastes a lot like banana bread...only BETTER! This will be on all my holiday tables from now on! Great use of my baby food stockpile that otherwise might go unused. Next time I will try using bananas or applesauce (baby food) in place of the eggs so I can feed it to my 11 month old without worry of egg allergy! Fun and yummy way to use up his baby food and get his veggies in him...and us!!

Holy Moly! So good!! Similar taste to banana bread but I like it even MORE! And love the use of baby food. So easy!! I plan on trying it with banana or applesauce (from my baby food stockpile) in place of the eggs next time (or maybe even chia seed) so I can feed it to my baby. Good use of the stocked up baby food that he won't otherwise use up and good way to get his veggies in him in a yummy and fun way!

We haven't tested this recipe with sweet potatoes but we don't see why it wouldn't work. Definitely omit the lemon juice if you do try it with sweet potatoes and let us know how it came out. Enjoy!

Just took this out of the oven, could not wait for it to cool, very--very good. A light cake, I used fresh carrots--cooked until soft then mashed like baby food. I used a cup. Will make this again and again.

I would be interested in cake/pies using blueberries or other fruits.

Couldn't this be used for a cake not just with a meal ... I could see it with cream cheese frosting or just powder sugar ....

to all of the above readers, who perhaps did not have the advantage of viewing the video of this recipe, Mr. Food states that the purpose of the carrot baby food is to save time and prep work. no peeling, cooking or pureeing carrots. I love quick and simple time savers like this. I have not yet tried this recipe but plan to do so soon.

Yes, I was wondering "Why Baby Food?" I was also wondering about what is in that baby food any additives? I like the idea of using canned carrots and pureeing myself.

I think cooking your own FRESH carrots would be a benefit. No worry about any additives, especially is they are organic.

This recipe has become my new go to dish for holiday parties and any type of get together. Extremely easy to prepare. I tried using sweet potato baby food, the taste wasn't popping out. Looking forward to trying with corn.

I made the carrot bake using a 12 ounce can of cooked,drained carrot that I pureed in my blender.The results were a fantastic product that taisted devine!

Why baby food? Could finely grated carrots work as well? Thanks and love your site!
