Stuffed Zucchini

Can't figure out how to get the gang to eat their veggies? Let 'em get a taste of this Stuffed Zucchini recipe and you'll never have a problem again! Our stuffed zucchini are loaded with cheesy and flavorful goodness!
What You'll Need
- 3 medium-sized zucchini, sliced in half lengthwise
- 2 tablespoons olive oil
- 1 (4-ounce) can mushroom stems and pieces, drained and chopped
- 1 small onion, chopped
- 2 plum tomatoes, diced
- 1/4 cup Italian-flavored bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (2 ounces) shredded mozzarella cheese
What to Do

Preheat oven to 375 degrees F. With a spoon, scoop meat out of zucchini halves; set aside shells and chop zucchini meat finely.

In a medium-sized skillet, heat oil over medium heat and saute chopped zucchini, mushrooms, onion, and tomatoes 6 to 8 minutes, or until tender. Stir in bread crumbs, Parmesan cheese, salt, and pepper until well mixed.

Stuff zucchini shells evenly with vegetable mixture and place in a 9- x 13-inch baking dish that has been coated with cooking spray.

Cover tightly with aluminum foil and bake 35 minutes. Remove foil and top evenly with mozzarella cheese.

Bake 8 to 10 minutes, or until zucchini are tender and cheese is golden.

I pre-cook 1 of ground turkey in the micro (meat in a colander over larger container, 7 minutes/pound) and let that cool while I'm assembling the rest of the zucchini boats. Makes a complete meal. There's more filling than the zucchini halves can hold, so I jus put the extra filling alongside the boats and those who want more can help themselves. Makes a complete meal in 1 pan. Whatever is left over can be used as a lunch for someone who works. YUM!

Ladybug, that's a good idea, but does the loose stuffing hold together on the side of the zucchini boats? I'm trying to think of another way. Maybe put the extra in mini muffin tins after forming a ball with it? That's funnty-"...for someone who works"! We all work don't we, whether it's inside the home or out? I know that I work all morning sometimes just to prepare a great dinner!

I like to fill zucchini boats with pizza toppings (crumbled sausage, pepperoni, onions, mushroom, etc.) mixed with pizza sauce, top with cheese, and bake. All of the flavor of pizza without the added calories from the crust.

I made this a couple nights ago and it very good and quite easy to put together. I served it with Italian flavored pork chops and my husband rated it a 9 out of 10. I've only gotten one 10 before so it's definitely a keeper.

I make this often....I also add mild hot sausage and shredded sharp cheddar cheese to the mix, with fresh mushrooms...also use sharp cheddar on top. Yumm!

I added ground beef for Hubby and used provolone slices on top because I didn't have mozzarella....yep, it was soooo good! And easy

Sounds like Zucchini Boats. I will try this recipe but I will use fresh saute mushrooms. I don't like can muchrooms they are rubbery
