I love visiting friends who live by the ocean and make me clams casino with fresh clams. They're yummy, but they take hours to make...and what a mess! I came up with a shortcut version that's a super appetizer when company drops in.
What You'll Need
- 3 (6-1/2-ounce) cans chopped clams, drained
- 2 (4-ounce) cans mushroom stems and pieces, drained
- 1 medium-sized red bell pepper, chopped
- 1 medium-sized red onion, chopped
- 4 ounces bacon
- 3/4 cup unflavored dry bread crumbs
What to Do
- Preheat oven to 400 degree F.
- In a small bowl, combine clams and mushrooms, and pour evenly over bottom of a 9-inch pie plate.
- Process peppers, onions, bacon, and bread crumbs in a food processor until smooth. Spread evenly over clams and mushrooms. Bake 20 to 25 minutes, or until hot throughout and golden.

Okay-you bake 20-25 min. until hot throughout-then what? Do you put it on crackers, eat it with a spoon or what?

Thanks for your question. You do not need to cook the bacon first. When you process it with the peppers, onions, and bread crumbs, it will be finely chopped and will cook completely when baked in the mixture.
