Everyone loves good old-fashioned meat loaf, but here in the Mr. Food Test Kitchen we prefer to jazz it up a bit. How? By keeping the timeless flavor we all love, but giving this Crispy Fried Meatloaf a golden coating we can really sink our teeth into. There are a lot of different ways to do meat loaf all over the world, but we think this one is absolutely marvelous! 

What You'll Need

  • 2 pounds ground beef
  • 1 1/2 cup fresh bread crumbs
  • 2 eggs
  • 1/2 cup water
  • 2/3 cup ketchup, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

  • COATING
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 1/2 cup Panko bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable oil

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, combine beef, bread crumbs, eggs, water, 1/3 cup ketchup, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon garlic powder; mix well. Place mixture in prepared dish and shape into loaf. Spread remaining ketchup over top.
  3. Bake 60 to 70 minutes, or until no longer pink in the center. Let cool, then refrigerate at least 2 hours. Slice cold meat loaf into 3/4-inch slices.
  4. To make the coating, place flour in a shallow dish; place eggs in another shallow dish and lightly beat. Combine Panko bread crumbs, salt, and pepper in a third shallow dish. Coat a slice of meat loaf on both sides with flour, then egg, and finally with bread crumbs.
  5. In a large skillet, heat oil until hot. Fry a few slices at a time 1 to 2 minutes on each side, or until golden brown. Drain on a paper towel-lined platter and serve.

Do you think I could use Beyond Beef instead of ground beef?

I missed something or I'm just confused. I saw only 2 eggs in the ingrediencies and there were two references to "Eggs" in the directions. I assumed eggs are at least two eggs, that's a total of 4 eggs 2 for the meatloaf and 2 for the coating. I hate assuming, so I need some help. How many eggs are used in this recipe?

I have refried meatloaf a lot over the years, but not like this. I will make another loaf this week and try it. My loaf is a bit more 'loaded' than the one posted, but think it will be great fried the way the recipe asks for. I cannot see the really bad negative comments from the past, other than the one about calories, which is silly, as everyone knows there are a ton of calories in meatloaf, but MOST people love meatloaf, so I ignore that. Those that slam recipes like this are so narrow-minded...I love this site, and please don't change a thing. I have made at least a hundred new things just off the recipes on the site. Great Job guys and gals.

This was pretty good. I made this with left over turkey meatloaf. I left a few pieces on a plate with the intentions of returning to eat a slice but when I got back the plate was empty. Safe to say it was a hit at my house! :')

I have made this twice, the first time it was very good but i used my meatloaf recipe and it didnt hold together so well for the dipping and frying portion of the recipe. Even tho it was good, it didnt look as nice as the picture. The next time that i made I followed the recipe to a tea...and let the loaf refrigerate overnight....turned out spectacular & held together perfectly. The meatloaf recipe yielded a perfectly textured loaf that sliced like a dream...would be a great recipe even for meatloaf sandwiches....this recipe is a keeper, according to my husband !

I make meatloaf often, my hubby and sons love ANYTHING with ground beef:) If I ever have any leftover, I'm trying this.

this was the best meatloaf in the world

am going to try but people don't we have more urgent matters going on in what use to be the greatest country in the world. I'm soon to be 71 so I know some what of what I am speaking of. Flora

Panko is a Japanese style bread crumb that is coarser than the usual bread crumb. It can be found in most grocery stores. I purchased my at Price Chopper.

I rarely fry things anymore, mostly 'cause its such a mess to clean up and I've tended toward the easy shortcuts, such as "oven fried". BUUUUT. . . this I am definately going to check out on the next meatloaf leftovers (if there r any). Besides as a true daughter of the south, born and bread, I feel it is my civic duty. Seriously, it sounds fantastic as a "something different for dinner night". I'll check back & let ya'll know. (Seemed like a tittle lightheartedness was in order). Luv, luv this site!

Hello: it's just a recipe, try it or not. some my like it, it's not a law for everyone to like. we have to much judgment and hate with out bitching about a simple recipe.

Wow! I can't believe how much a meatloaf recipe generates such hostility! Grow up, people! Mr Food would be turning over in his grave if he knew his recipes stirred such dischord in his followers. Not everyone will like every recipe! Mr. Food has just as many salad and healthier recipes as he has for fried dishes. He was nothing if not diverse in his cooking styles and recipes. May God rest his soul.

I think this would be a great leftover try! Cut into squares or batons and dipped in your fav bbq sauce. Sounds like superbowl treats to me!
