Now here's an easy ground beef recipe that's definitely not boring. Loaded with southwestern spice, veggies, and twisted pasta, our Mexican Twist is a mouth-full of "ooh, yeah!" And the best part is that it cooks up in a quick 25-minutes, making it an easy weeknight dinner.
What You'll Need
- 1 pound ground beef
- 1 large onion, chopped
- 4 cups water
- 1 (15 ounce) can whole kernel corn, drained
- 1 (14 ounce) can diced tomatoes, undrained
- 2 (1 ounce each) envelopes dry taco seasoning mix
- 8 ounces spiral pasta
What to Do
- In a 6-quart soup pot, over high heat, brown ground beef and onion 8 to 10 minutes, until no pink remains in beef and onion is tender. Add remaining ingredients except pasta; mix well.
- Bring to a boil, then stir in pasta. Reduce heat to low, cover, and simmer 15 to 18 minutes, or until pasta is tender.

I made it as written. Thought it was to soupy. Will make again with 3 cups of water, not 4 cups. And will all a little salt.

Too much water and not enough flavor. I was disappointed in this recipe. Will probably make it again. If I do I'll use a lot less water.

I doubled the recipe but used 7 cups water, still seemed like too much water. it made it more of a soup. still it tasted good

I make a dish like this, but I cook the pasta separate mix it with the beef mixture put it in a baking pan, cover it with shredded cheese and bake until the cheese is melted. its a family favorite.

Do you add the water to the beef with the remaining ingredients? Or is the water for the pasta :{

Or use lean ground beef and then you don't need to. I always use minumum 85/15 and often leaner and there's no grease to drain.

Suggest draining excess grease off ground beef before adding other ingredients.
