Old World Goulash

This saucy one-pot meal earns points for long-cooked flavor without a lot of long prep. Old World Goulash is a hearty all-in-one dish that will warm and satisfy your hungry gang.
What You'll Need
- 1/4 cup (1/2 stick) butter
- 1 1/2 pound beef round steak, cut into 1-inch chunks
- 2 large onions, quartered
- 2 potatoes, peeled and quartered
- 4 carrots, cut into 1-inch chunks
- 2 cups water
- 1 3/4 cup beef broth
- 1/2 teaspoon thyme leaf
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tomatoes, chopped
What to Do
- In a soup pot, melt butter over high heat. Add steak and onions and cook 6 to 8 minutes, or until meat is browned, stirring frequently. Add remaining ingredients except tomatoes, cover, and reduce heat to low. Simmer 45 minutes.
- Add tomatoes and simmer, uncovered, 25 to 30 minutes, or until beef is tender and sauce is thickened.
Notes
Serve this over medium egg noodles and you won't miss any of the hearty sauce!

I fixed this concoction last night for supper and I was NOT impressed! To me and my husband it tasted like watered down Beef Stew! In fact I think I'd rather have Beef Stew for dinner! I went according to the recipe directions and although it tasted wholesome, it tasted really bland! It needed some seasoning and something more than just water in it! I won't be making it again! YUCK!

This is a great hearty stew recipe, perfect for those chilly fall evenings. I adapted this recipe for my crockpot, and it turned out delicious. I coated the cubed steak with a little flour and browned it in a skillet first, then added everything to the slow cooker. I reduced the water by 1/2 cup (the crock pot seems to trap much more moisture than a pot on the stove) and it turned out wonderful. I will be making this again soon!

browned the beef with garlic onions cut the water in half and added 1 (15oz )can of tomatoes along with the beef broth ..added good pinch of thyme used only 2 carrots and add 2 more potatoes very good! good with potatoes, rice, noodles, hot garlic bread it is all good!

Sounds great, but I would use chicken or pork, and put it over brown rice, and leave out the carrots, butter, paprika, and tomatoes. And up the water by 50%, and cook it in the microwave.

Very tasty plus easy to prepare. I did add a chopped purple top turnip and diced bell pepper. We served over noodles, had a pan of cornbread and a jug of sweet tea. a very good meal!Thanks for the recipe.

If you would like to prepare this in a slow-cooker, here is what we recommend; brown the beef in a skillet first, then place it in the slow-cooker. Next add the veggies and remaining ingredients and stir. Cook on low setting for 6 to 8 hours or until beef is tender. Enjoy!

Nothing wrong with a little bit of butter per serving. Much better than using processed vegetable oils. And we skip the extra starch entirely. The potato and carrot is enough.

Made this without the cut up tomato- Excellent blend of flavors. So simple - served it with garlic bread - Just Delicious!!!!

What is it with you and bay leaves and thyme. Neither of these two spices are found in Authentic Hungarian Goulash.
