Sweet and Spicy Meat Loaf

Make over your classic meat loaf recipe with our sweet and spicy ingredients to give this comfort dish a "today" spin! Featuring tangy French dressing, it'll become a favorite meat loaf at your house, for sure!
What You'll Need
- 1 1/2 to 2 pounds ground beef
- 1 onion, finely chopped
- 1 cup dry bread crumbs
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup sweet-and-spicy French dressing
- 2 eggs
- 1 (4-ounce) can mushrooms, drained
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
What to Do
- Preheat oven to 375 degree F. Coat a 9" x 5" loaf pan with cooking spray.
- In a large bowl, combine all ingredients except ketchup; mix well. Distribute mixture in pan; spread ketchup evenly over top.
- Bake 1 to 1-1/4 hours, or until juices run clear. Allow to sit 5 minutes. Pour off excess juices, slice, and serve.
Notes

My mother-in-law used to make a meatloaf similar to this but she used tomato soup instead of ketchup/dressing/cheese and added vinegar and brown sugar to the topping. I think she called it Dutch Meatloaf. But this picture makes my mouth water and I am going to try it. I like the idea of cheese in it or topping it. Good comments from all.

sounds good. I always put brown sugar and ketchup in the meatloaf, and make a mix of both for the topping.....real good..it's a favorite at my church.

Wonder if Dorothy Lynch dressing would work ok...? I always top my meatloaf with BBQ sauce instead of ketchup. Try dividing the meat in half and layer it in the pan with the cheese sandwiched between layers of meat. Or mix in the cheese and add a layer of mashed potatoes in the middle. Lots of options with meatloaf!

A few minutes before it's done, top with slices of American or Cheddar cheese and return to oven just long enough to melt the cheese!

Love meatloaf ... it's so versatile! I made a couple of small changes. Did not use mushrooms (don't care for them); topped with BBQ sauce instead of ketchup. It was a total hit with the family. Love your emails too.
