Chocolate Zucchini Bread

You're going to love this recipe for Chocolate Zucchini Bread! Made with your favorite summertime squash (that we always seem to have a ton of), we add in some cocoa, cinnamon, and chopped pecans to make a healthier bread recipe that's a chocoholics delight! What You'll Need
- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup baking cocoa
- 3 eggs, beaten
- 2 cups grated zucchini (about 1 large)
- 1 cup vegetable oil
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
What to Do
- Preheat oven to 325 degrees F. Coat 2 (9- x 5-inch) loaf pans with cooking spray and dust lightly with flour.
- In a large bowl, mix together flour, sugar, baking soda, cinnamon, salt, baking powder, and cocoa. In another bowl, combine remaining ingredients. Stir zucchini mixture into flour mixture, then divide mixture evenly between loaf pans.
- Bake 55 to 60 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes on a rack then remove from pans. Let cool completely before slicing.

Great tasting bread! I've made this recipe twice now -- used the directions as written except I baked mine in 5 mini loaf pans for 50 minutes. It was great to share this bread with family friends. The 2nd time, I made it gluten free using Bob's Red Mill 1-to-1 baking flour and it turned out just as great. I also added 3/4 cup of mini choc chips.

Good taste and not overly sweet. I am a very experienced baker and I found the batter was way too dry (almost crumbly) so I added 6 tbsp of mild. I didn't see any mention of this problem with other bakers. I almost thought "3 cups" flour was a typo as all the other recipes I looked at online called for only 2 cup flour (including King Arthur). The addition of the milk was very much needed. I did not squeeze or in any way try to make my zucchini dry, so I am not sure what the problem was. The baked bread had the perfect texture of a quick bread, not too dense and not fluffy. I think next time I will try chocolate chips in place of the nuts for a more pronounced chocolate taste.

Made this and it is delicious. I also have a Zucchini Bread Recipe which I added the Cocoa, and it is AWSOME. Will make this again

Made it twice and a big hit everytime. I did add chocolate chips to top after in the pan and squished them down in. Excellent recipe.

I make this for my husband and he loves it. I got my recipe from allrecipes.com about 2 years ago. I made 6 loaves of this bread and gave it to my neighbors.

Great way to use zucchini love all the tasty and easy recipes on this site IF you want nutritional values and /or are on some kind of diet you can find other sites to suit you much better this is not a site for weight watchers or diabetics of course u can make over most recipes with less fat & lower calories very easily use Splenda or Sugar twin recipes that are baked are best with 1/2 sugar and 1/2 Sugar twin or Splenda or they will not bake up or taste right U can use apple sauce for 1/2 the fat in most baked goods like cakes or muffins and fat free or low fat cream cheese cottage cheesse sour cream etc You Do comprimise flavor, texture and presetnation..it is not rocket science
