Corn Tortillas

You haven't had corn tortillas like these unless you've been lucky enough to have them homemade. Wow! When you have the time, make them yourself. You'll notice the difference!
What You'll Need
- 2 cups instant corn masa mix (see Note)
- 1 cup plus 2 tablespoons warm water
- 1 teaspoon salt
What to Do
- In a medium-sized bowl, combine all the ingredients; mix well with a spoon until the dough forms a ball. Add 1 tablespoon more water if the mixture is too dry. Divide into 12 equal pieces and shape into balls.
- Cut open the 3 sealed sides of a large resealable plastic storage bag, leaving the zippered side intact and closed. Place a ball of dough between the two pieces of plastic. Using a rolling pin, roll each ball into a 6-inch circle.
- Heat a medium-sized nonstick skillet over medium heat and cook a tortilla for 30 seconds, then turn the tortilla and cook for 1 more minute. Turn the tortilla again and cook for 30 more seconds, or until golden.
- Remove to a covered plate and repeat with the remaining tortillas. Serve warm.
Notes
Corn masa mix is available in the ethnic foods section of the supermarket. Keep the balls of dough covered until you're ready to roll them so they won't dry out.
