Cranberry Bliss Bread

You'll experience pure bliss after just one bite of our Cranberry Bliss Bread. This homemade cranberry nut bread is so special-tasting, you might want to make a few loaves at a time to share with loved ones (it's a great homemade gift for the holidays!). When you're ready to enjoy your own, slather on some butter and let the goodness sink in!
What You'll Need
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup (1-1/2) sticks butter, softened
- 1 (8-ounce) package cream cheese, softened
- 1 1/2 cup sugar
- 2 teaspoons vanilla extract
- 3 eggs
- 1 1/2 cup cranberries (fresh or frozen)
- 1/2 cup chopped walnuts
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
- In a large bowl, combine flour, baking powder, and salt; set aside.
- In another large bowl with an electric mixer, combine butter, cream cheese, sugar, vanilla, and eggs; beat until blended.
- Slowly add flour mixture to cream cheese mixture until combined. Stir in cranberries and nuts, then pour into pan.
- Bake 80 to 85 minutes, or or until a toothpick inserted in center comes out clean. Let cool in pan 10 minutes, then remove to a wire rack to cool completely.

This is a keeper!! I have a small companion oven that cooks very fast, I should have baked it in the middle of the oven, not on top rack. I used fresh cranberries and I did not need 80 minutes. Keep an eye on it. Gonna make another one soon! Cream cheese makes it moist!!!

If you have frozen cranberries, do they need to be defrosted prior to using them in this recipe? I am a little worried that they will be run in the batter?

Hello! Frozen cranberries do not have to be thawed before baking in bread. They wiill actually not bleed as much if they are frozen. Hope this helps!

In place of the vanilla extract I subsititued 2 t of orange extract to which reminds me of cranberry bliss bars. I'm sure the orange zest would work too!

I did an experiment to try to find a go to recipe for cranberry bread. After making this recipe I made one from a different site. This one won hands down. Store the bread in the fridge and when you bring it out, to enhance the flavor and more palatable, put it in the microwave for a few seconds. It brings out the cranberry flavor more. Have already gifted a neighbor with one. Made this in four small loaf pans. The other recipe I used made three loaf pans. This will definitely be my go to recipe for cranberry bread.

I was disappointed with this bread. I did use the recommended loaf pan and the bread was overdone at 60 minutes when I checked it. If left in for 80-85 minutes the outer crust would be burned. I was looking forward to this bread but it did not have the taste expected. I would recommend cutting the cranberries in half and stirring them in 1/2 cup sugar as recommended by another person. I followed the recipe but found it to resemble cake versus a nice moist fruit bread. Too bad that I did not check the bread after 45 minutes.

Oh, I forgot to mention that I made four small loaves instead of one large loaf. They were perfectly done after 42-45 minutes in the oven. Be sure to give them the toothpick test.

Made this today. Just the right amount of sugar. Coarsely chopped the cranberries and then mixed them with 1/2 cup of the sugar. Delicious, my hubs and I both love it. Thanks. Make the recipe exactly as written, adding the 1 cup of sugar and all the rest of the ingredients. So tasty. The cranberries add just the right amount of tang.

I have another version of this recipe- for 2 loaves and it has a glaze to add to it- but I ran my berries through the food processor first- Wonderful Flavor!

Great recipe Be sure to take 1/2 cup of the sugar and stir in cranberries before adding use the other 1 cup for the rest of recipe cranberries by themselves are very bitter and need sugar ! we have large cranberry bogs up here and fresh cranberries are very popular and used in a variety of recipes Wonderful Christmas recipe !

Hi there! While the Test Kitchen has not converted this recipe into mini loaves, we do believe that this is an acceptable way of baking up our Cranberry Bliss Bread. Since mini loaf pan sizes vary so much in size, so will the baking time and temperature. Enjoy!
