Cherry Nut Bread

Cherry Nut Bread is a cake-type bread that's perfect for adding novelty to your dinner table, or just for snacking.
What You'll Need
- 2 1/2 cups all-purpose flour
- 1-1/4 to 1-1/2 cups sugar (to taste)
- 1 tablespoon baking powder
- 7 tablespoons vegetable shortening
- 3 eggs
- 1 cup orange juice
- 2 tablespoons grated orange peel
- 1/4 cup cherry juice (from the canned cherries)
- 1 (1-pound) can tart cherries, well drained and coarsely chopped
- 1/2 cup chopped nuts
What to Do
- Preheat oven to 350 degrees F.
- In a large bowl, combine flour, sugar, and baking powder. Cut in shortening. Stir in eggs, orange juice, orange peel, and cherry juice. Fold in cherries and nuts. Pour into 2 greased and floured 8- x 4-inch loaf pans.
- Bake 45 minutes, or until a toothpick inserted in center comes out clean.
- Cool 10 minutes then remove from pan. Serve warm, or let cool on a wire rack.

Hi there! Vegetable shortening, most commonly known by the brand "Crisco," is a solid fat that is made from vegetable oils. It doesn't have much of a taste and it's used in cooking and baking. You can find it near the other fats/oils in most grocery stores. Hope this helps!

This was o.k. maybe should have tried the maraschino cherries, I also omitted orange peel and baked for 50 minutes

As in any bread, muffin or cake recipe where fruit is used; after draining fruit I place it on a paper towel to absorb excess juices then dredge in flour to prevent fruit from sinking to the bottom. Substituted Maraschino cherries (one large jar), coarsely chopped and the cherry juice, and omitted the orange peel. I have a newer convection oven and the baking time was right on.

What temperature, and for how long in your convection oven please? I also have a convection oven, but don't use this feature much.... Thanks for replying

If you're using a convection oven, we recommend baking at 350 degrees F, and check the bread at 45 minutes using the toothpick test. Enjoy!

Delicious but I did have to bake them longer. I baked them an hour and 10 min. Everyone loved it.

Absolutely delicious. I had to bake the bread for an hour however, so I covered the edges of the loaves with foil to prevent burning. Using the Crisco in stick form makes it easy to get an exace measurement on the shortening. Definitely a keeper.
